- Boil the Potatoes: Wash the potatoes thoroughly and boil them with their skins on until they are soft. Keeping the skins on helps prevent the potatoes from absorbing too much water, which is crucial for the texture of the gnocchi.
- Prepare the Potatoes: Once the potatoes are cooked, drain them and let them cool just enough to handle. Then, peel the skins off. Mash the potatoes while they're still warm to ensure a smooth consistency without lumps.
- Make the Dough: To the mashed potatoes, add flour, one beaten egg, and a pinch of salt. Mix everything until it forms a cohesive dough. Be careful not to overwork the dough to keep the gnocchi light and fluffy.
